Welcome to my blog!

My inspiration for what I have created here stemmed from my own struggles with my autistic son; it is never easy, no two autistic kiddos are the same.

I felt alone and did not know how I would survive this daily struggle any more, I searched for answers. Upon reaching out to a local support agency,
I was paired up with 3 autism-related teams; two were ABA therapy, and one social therapy.

Now my day with my son has drastically changed - I have so much information I would like to share, if I can help one parent or caregiver, I have accomplished my goal.

As a disclosure in regards to media posts: I will not be including any posts of my children. This is due to legal reasons;
I do apologize that I cannot share with you pictures or videos of my kiddos, (my second is not autistic) they brighten my day!

Homemade Yogurt in the Ninja Foodi

Summary: This is my recipe for yogurt using the Ninja Foodi Pressure Cooker/Air Fryer. I will include the vlog of me making these if you would like to see the video: I left my thoughts on this at the bottom, because let's be honest, everyone scrolls past that to get right to the recipe anyway.






Let's get right into the recipe
Cook time: 9 hours (1 hour boil / 8 hours incubate)
Prep time: 15 minutes
Yield: 5 cups of 4oz yogurt, with fruit compote makes 5 cups 8 oz yogurt

For the ingredients in the fruit compote, you will need: 

  • Fresh Fruit: I used 2 packages fresh strawberries.
  • Honey: 2 tbsp.
  • Corn starch: 1 tbsp.
  • Water: 1 tbsp.
For the ingredients in the yogurt, you will need: 
  • Yogurt Starter: Must have live and active cultures, 3 tbsp.
  • Whole Milk: Half gallon.
  • Honey: 1/2 cup.

You will also need these cooking items: 
  • Large Mixing Bowl: For straining the whey from the yogurt
  • Strainer: Also for straining.
  • Cheese cloth: 2 12 inch sheets. Lay these in the strainer.
  • Ninja Foodi Air Fryer Cooking Stand: For straining. (watch the video for better demonstration on how to use)
  • Glass or cermaic bowl: To put the yogurt in after incubation.
  • Whisk: For mixing in the yogurt starter


Clean the Foodi before starting prep:


Clean your ninja foodi as you would when you deep clean it.

For mine, I cut up lemons and add them to the fryer basket.

I also add 1/4 cup vinegar and 3/4 cup water to the pot.

Add pressure cook lid with valve set to 'seal' position.

Cook on high for 30 minutes with a manual pressure release when finished.

Remove lid once pressure pin is down and rinse all foodi items, removing the fryer basket from the pot. 


Let's get cooking:


Add milk to the pot.

Lock the pressure cook lid in place.

Set the valve to 'vent'. This is an important step.

Press 'slow cook yogurt' button twice. 'YGRT' will read on the screen. Press start.

The screen will now say 'BOIL'. Let the milk boil for 1 -2 hours until the display reads 'COOL'.

Remove lid and add yogurt starter, whisking together with lid. Put lid back on.

Allow milk and yogurt mixture to cool. Mine took about an hour.

Set Foodi to 'INCBTE'. For this, I simply turned the Foodi off, pressed 'slow cook yogurt', and then adjusted the up and down arrows until this display read on the screen. Press start. Timer will count down 8 hours.

Let incubate full 8 hours, then remove lid and proceed to next steps.

Let it set:

Using a ceramic or glass bowl, pour the yogurt into it and let it set in the fridge at least 8 hours.

Put the air fryer cooking stand upside down in the big mixing bowl. Add the strainer to the top and place the cheesecloth over it in a crisscross pattern so all areas of the strainer are covered. Strain at least 8 hours.

Remove yogurt from strainer and place into a large contrainer. Add in yogurt.

For the fruit compote (fruit on the bottom):


Add the water and corn starch in a small bowl or cup together and mix well, set aside.

Simmer fruit, corn starch mixture, and honey in a medium sized sauce pan for 5 minutes, until the fruit is soft.

Allow time to cool before adding to yogurt.

I liked to add the fruit compote to the bottom of some small containers and pour the yogurt over it for 'fruit on the bottom yogurt'

And thats it, all done!


My closing thoughts
This was a loooong process making the yogurt. My first attempt I failed, but alas, I do not give up, and the proof is in the-....yogurt! 😁 With the honey the yogurt is a little bit sweet and I enjoyed that. I am happy that my kids actually like this because they aren't yogurt eaters. I am however, I have a cup of yogurt every morning for breakfast. The strawberry fruit compote I made was very good. If this is your first time, I would recommend using strawberries until you feel comfortable trying a new fruit with this recipe. I was so proud of myself that this turned out! I will be making yogurt at home every sunday now. This is going to save me money and I won't be throwing away all those plastic cups from store bought yogurt. I really enjoyed this recipe. Pork Taquitos Recipe


Homemade Pork Taquitos in the Ninja Foodi

Summary: This is my recipe for pork taquitos using the Ninja Foodi Pressure Cooker/Air Fryer. Let's get right into the recipe

Cook time: 1 hour 5 minutes
Prep time: 15 minutes
Yield: 15 taquitos

For the ingredients in the pork mixture inside the taquito, you will need: 

  • Pork Loin: I used the Tyson brand and I bought it from Walmart, I believe it was 2-3 lbs and cost around $8.
  • Shredded Cheese: They didn't have a taco seasoned shredded cheese so I used Colby Jack. You will need 2 cups.
  • Sour Cream: I used the Daisy brand and bought the 24 oz container. You will need 1 1/2 cups.
  • Salt: 2 teaspoons
  • Flour Tortillas: I used the ortega brand, you will need 2 packages as they come in a 10 pack and you will need 15.
For the ingredients in the meat rub, you will need: 
  • Brown sugar: Packed onto the measuring spoon, 3 tbsp.
  • Paprika: 1 1/2 tbsp.
  • Salt: 2 tsp.
  • Garlic Powder: 1 tsp.
  • Onion Powder: 1/2 tsp.
  • Cumin: 1 2sp.
Cut the loin into 3-4 inch sections. Remove any extra fat. Rub the seasoning all over the meat, dust off any extra (as this rub does pick up a lot), let rest for 5 - 10 minutes. 

You will also need these for the liquid in the bottom of the pot: 
  • Water: 2 cup.
  • Dr Pepper: 1 cups.


Let's get cooking:



Add the fryer basket to the pot.

Next, add the liquid right over the fryer basket into the pot.

Place the seasoned meat into the fryer basket.

Sprinkle some brown sugar over the meat.

Place the pressure cooking lid on the pot and lock into place, making sure the seal valve is set to 'seal'.

Turn the instant pot on and set on high setting to pressure cook for an hour and 5 minutes.

Once done, release pressure valve and open lid once pressure pin has went down.


Transfer meat with a large spoon into a large bowl, shred meat with a fork. Do not add liquid to the meat.

Let cool for 10 minutes, then add in salt, sour cream, and cheese.

Roll 'em up:

Using a plate, place a tortilla flat on the plate. Add some of the pork mixture using a fork in the middle of the tortilla and roll up. Seam should be on the bottom.

Empty out liquid from pot, replace with new water (exact amount doesn't matter, 1-2 cups should be fine).

Place taquito into fryer basket, 5 will fit.

Air fry for texture:


Using the air fryer function, set to 8 minutes at 400 degrees, turning over once during cooking.

Once done frying, place on a baking sheet to cool.

Store as you would like - I personally like to freeze mine in a ziploc bag.

And that's it, all done!


My closing thoughts
I really enjoyed making these. Of course they are different than the taquitos bought in a store. I found these to be more filling and that they taste better. A quick simple snack to pull out of the freezer and pop in the microwave when needed. And who doesn't love quick and easy? Carter's 9th Birthday Party!





Celebrating Carter's birthday at Sir Bounce A Lots

How the party went:

I paid for a party at Sir Bounce a Lot's, which was not cheap, but I feel it was worth it.
5 boys showed up and Maddex's dad brought him too as he was with him for the weekend. The boys had pizza, cake, ice cream, and soda. They also got tokens for games and time to jump on the bouncy castles, and a goodie bag!
Overall, it was a good experience.

My closing thoughts

Paying for the party was definitely worth it. I didn't have a bunch of boys running around my house and I didn't have to clean up afterwards. If you have the money for this type of thing, I would say to go ahead and do it.
